A vibrant and expressive cup, this coffee balances deep fruit sweetness with bright, tropical acidity. Flavor Notes: Black cherry, honey, strawberry – rich and juicy with a delicate floral lift.
Grown at 1800 meters on La Montaña, a 4-hectare farm run by Eli Chilcon and his family, this lot reflects the dedication and resilience of smallholder farming. The farm’s high-altitude location brings complexity to the cup, while careful cultivation methods—including shade-grown practices and soil health management—ensure consistency and quality despite the challenges of climate change.
After being harvested between July and October, the cherries are rested before pulping, then undergo an extended 48-hour fermentation to enhance their depth and clarity. Following a meticulous washed process, the beans are slowly dried over 14 days before final selection. At Falcon’s warehouse in Jaén, each lot is assessed to determine quality and ensure fair pricing.
